Mast O Khiar (yogurt, cucumber, mint dip)










Mast O Khiar is a typical dish offered at the beginning of a meal. It is a cool and refreshing dish similar to Raita in Indian cuisine and tzatziki from Greek Cuisine. Many cultures have a version of this dip.

1 Cup Middle Eastern or even Greek plain yogurt (this yogurt is thicker and tangier than its American counterpart. If you must buy American yogurt or the yogurt you buy is loose/thin strain it over cheese cloth in a colander. Typically I have strained yogurt for an hour or more. You are looking for a consistency similar to pudding.

1/2 Small bunch of Mint chopped fine.

1/2 Cucumber peeled and finely diced. An alternative is to grate the cucumber and squeeze it in a paper towel to remove excess moisture.

1 Large pinch of dried oregano (most recipes do not call for this but, I like the addition)

Another addition you can use or leave out is a glove of grated or micro planed garlic. It adds a nice bite to the dip.
